1.5 cup good Italian bread, chopped fine
milk to cover, soak 2 minutes and squeeze out
1/2 lb each beef, veal, break up meat well
3 oz minced pancetta
1 egg
1/4 cup ricotta cheese
1/4 cup grated parm
1/4 cup chopped parsley
1 clove garlic, minced
1 shallot, minced
1 tsp salt
Parm to garnish
Salt and pepper
mix it all together and roll into 1.5 ish inch balls. brown. put in sauce.
